A few weeks before leaving the island, I started purging, using and paying pantry items forward and used the time as an excuse to do a little more baking with a few favourite ingredients and tried a few new recipes that I found stashed away plus a few new ones I had read about in the blogosphere. I read about these tasty treats over at cityhippyfarmgirl - they make for great lunch box fillers for work and school or afternoon tea with a friend.
Banana Oat Honey Squares
Ingredients
2 bananas mashed
100g butter melted
5ml vanilla – I used 10ml
5ml cinnamon – I would increase this to 10ml next time
45ml honey
2 cups whole oats
Method
- Preheat the oven to 180°C.
- Mix all the ingredients together in a bowl.
- Press the mixture into a greased 23cm x 23cm pan and bake for 45 minutes.
- Slice into squares.

Hi Shamael, I originally go the recipe from http://cityhippyfarmgirl.com/2011/05/24/taunting-newspapers-and-banana-oat-bars/ and I have only made them in the oven. I am sure that you would be able to make them in the microwave but unsure of how many minutes. Start with small increments as microwave ovens cook things much faster than a convection oven. Hope they work out. Have a happy day.
