Courgette Tartlets

I had high hopes for this recipe but it fell a little short on flavour.  Even the pictures didn’t turn out the best.  Chopped, fried bacon and mushrooms would take it to the level I was hoping, so if you are going to make these please do add the bacon and mushrooms.

Courgette Tartlets

Ingredients

3-4 courgettes finely sliced
3 eggs
45ml crème fraiche
100ml milk
1 small garlic clove crushed
2.5ml hot English mustard powder
Salt and black pepper to taste
2 rashers of bacon chopped and fried - missing from mine
4 mushrooms chopped and fried
– missing from mine

Method

  1. Line 4 ramekins with the courgettes overlapping the courgettes.
  2. Beat the eggs in a bowl and add in the other ingredients and stir through.
  3. Divide between the ramekins and bake for 12-15 minutes.

  2. I forget, for a moment, that you’re living in that “other” hemisphere and was surprised to see a corgette recipe in March. It will be our turn soon enough; it’s your turn now to enjoy Summer’s bounty. The pics are fine, Mandy, and I bet the dish tastes good, as is. Of course, adding some bacon would improve it but that’s true for just about anything. Well, at least in my home. :)

  4. Thought it looked really pretty like a mini soufflé – but yes, bacon and mushrooms are such good partners with most things, eggs especially!

  10. I like the idea of lining the container with the courgettes and I love that you are so honest regarding the flavour. Did you try turning them out of the ramekins?

  11. Mandy, lovely little tartlets! I have many recipe ideas that fall flat in the flavor department, but keep on testing. That’s how brilliant new recipes are born! Maybe some sauteed leeks with that bacon?

  12. I like the fact you posted about a recipe that didn’t quite come up to expectations, what about adding some freshly chopped herbs? Mint always works well with courgettes, or maybe some oregano or parlsey. I like the idea of using them in a ramekin like you did
