Summer soups simply don’t get any easier than this and you if making it for a dinner, safe yourself some time and make it the day before.
Cold Tomato Soup
Ingredients
1 tin Italian whole tomatoes
2 tbsp natural yoghurt
½ tsp mild curry powder
½ tsp sugar
1 small onion
½ tsp salt
Method
- Blend all the ingredients until smooth and place in the fridge. Overnight is perfect.
- Serve with a dollop of yoghurt and freshly chopped parsley.
