Brown Onion Sauce

We often have gravy with our meals, but the traditional beef or chicken gravy can become quite mundane, whereas this Brown Onion Sauce with it’s rich, full flavourful adds a new depth to roast beef and Roast Chicken dinners, bangers and mash and let’s not forget the ever loved pie and chips (French fries).

Brown Onion Sauce



30ml butter
2 brown onions peeled and sliced
20ml cake flour
300ml meat stock
30ml sherry or port
5ml sugar
10ml tomato paste


  1. Heat the butter in a saucepan and add the onions and cook over a low heat until golden brown.
  2. Stir in the flour and gradually add the meat stock and stir until thickened.
  3. Stir in the sherry or port and add the sugar and tomato paste.
