We often have gravy with our meals, but the traditional beef or chicken gravy can become quite mundane, whereas this Brown Onion Sauce with it’s rich, full flavourful adds a new depth to roast beef and Roast Chicken dinners, bangers and mash and let’s not forget the ever loved pie and chips (French fries).
Brown Onion Sauce
2 brown onions peeled and sliced
20ml cake flour
300ml meat stock
30ml sherry or port
10ml tomato paste
- Heat the butter in a saucepan and add the onions and cook over a low heat until golden brown.
- Stir in the flour and gradually add the meat stock and stir until thickened.
- Stir in the sherry or port and add the sugar and tomato paste.
