Fruit Squares

These fruit squares are a welcome treat added to a work lunch box and make for a lovely Christmas hamper treat.

Fruit Squares



500g fruit cake mix
250g mixed peel
250g cherries
200ml brandy
250g butter
250g castor sugar
6 eggs
100g almonds
360g flour
10ml baking powder
5ml vanilla essence
2.5ml salt


  1. Soak the fruit in the brandy and a little water overnight.
  2. Preheat the oven to 140˚C.
  3. Cream the butter and sugar.
  4. Add the eggs and mix well.
  5. Add the nuts, flour, baking powder, vanilla essence and fruit and  mix through.
  6. Put into a greased pan.
  7. Bake for 1 hour and 15 minutes.
  8. Allow to cool before turning out.
  9. Cut into squares.

  1. These look very delicious and the perfect thing for Xmas baking gifts. Or I could just eat them myself! There will be very little competition from the household teens – they seem to be afraid of dried fruit!
