Today’s Wassail Cup recipe is the first instalment in the Drinks Chapter and I dedicated it to all my family and friends who are super chilly in the Northern hemisphere. Here’s to you keeping warm.
6 x 600ml brown ale
450g soft brown sugar
1 large stick cinnamon
1 tsp nutmeg
½ tsp ground ginger
2 lemons thinly sliced
750ml medium sherry
- Pour 2 x 600ml ales into a large pan. Add the sugar and cinnamon and simmer gently a over low heat until the sugar has dissolved.
- Add the spices, lemon, sherry and the remaining ale.
- Before serving remove the lemon slices and cinnamon stick.
- Garnish with roasted apple slices and fresh lemon slices.
Serve with oat biscuits.
