Asparagus Sticks

Today marks the start of our last weekend on the island – I hope the weather plays along so that we can enjoy a bit of time at the beach before we start our journey home to a cold winter next Tuesday.  We are lucky to have friends who are graciously filling our last evenings with farewell dinners and we will be taking full advantage of being able to eat al fresco.  These asparagus sticks make for a nice snack for with pre dinner drinks and are super easy to make and are lovely served with a mayonnaise for dipping.

Asparagus Sticks

Ingredients

1 packet ham
Mayonnaise for spreading
1 packet fresh asparagus
1 roll phyllo pastry defrosted
60ml melted butter
Ground sea salt and black pepper

Mayonnaise for dipping

Method

  1. Preheat the oven to 180ºC.
  2. Spread the slices of ham with mayonnaise and wrap an asparagus spear in each slice of ham.
  3. Cut the sheet of pastry into strips a little longer than the asparagus spears.
  4. Wrap the spear individually in the pastry strips.
  5. Brush each with the melted butter and season with salt and pepper.
  6. Place on a greased baking sheet and bake for 15 minutes or until golden brown.

  2. Do you realize how pefect these would be for kids! My son might actually eat asparagus now! Love this idea and it seems so flavorful. Anything with pastry dough is great! Thanks for sharing

  3. Oh my gosh, I love these! What a perfect little snack. Did you use regular ham, or prosciutto? I’m sure they’d be delicious either way. 🙂

  4. Whenever I come here, I always want to try something new. I’m not a huge fan of asparagus, but let me just say, these asparagus sticks really look amazing. Seriously. I might have to reconsider this asparagus thing lol.

  5. What a wonderful idea for summer entertaining . These would be perfect for the coming 4th of July holiday. I hope you have a great day. Blessings…Mary

  6. Fresh asparagus is about my favourite vegetable. I love to quickly sear some in a bit of olive oil and crushed garlic, toss in some lemon juice and serve it up.

This might be a way to get the kids to eat it. Even telling them it’ll make their wee smell funny didn’t work.

    • What a great idea to add garlic to seared fresh asparagus. I would love to hear if your kiddies try these and I bet when they realise their wee smells funny that they will either love asparagus or never touch the stuff again. 🙂
