A few weeks before leaving the island, I started purging, using and paying pantry items forward and used the time as an excuse to do a little more baking with a few favourite ingredients and tried a few new recipes that I found stashed away plus a few new ones I had read about in the blogosphere. I read about these tasty treats over at cityhippyfarmgirl – they make for great lunch box fillers for work and school or afternoon tea with a friend.
Banana Oat Honey Squares
Ingredients
2 bananas mashed
100g butter melted
5ml vanilla – I used 10ml
5ml cinnamon – I would increase this to 10ml next time
45ml honey
2 cups whole oats
Method
- Preheat the oven to 180°C.
- Mix all the ingredients together in a bowl.
- Press the mixture into a greased 23cm x 23cm pan and bake for 45 minutes.
- Slice into squares.

I was just thinking I need to do some type of oatmeal bars or something for my hubby to grab on his way to work. These sound amazing and just perfect for that. Love the banana mixed it!

how would this turn out if i used my microwave and if you know how many mins would i need to put this on?
Hi Shamael, I originally go the recipe from http://cityhippyfarmgirl.com/2011/05/24/taunting-newspapers-and-banana-oat-bars/ and I have only made them in the oven. I am sure that you would be able to make them in the microwave but unsure of how many minutes. Start with small increments as microwave ovens cook things much faster than a convection oven. Hope they work out. Have a happy day. 🙂
These look heathy, easy and yummy! I will have to try them soon. btw, as i can’t take dairy, i think it should ok to use light olive oil instead of butter?

What a pity about you not being able to have dairy – I know some people can use butter as it forms part of fats and not dairy. Please let me know how these bars turn out using oil if you make them.
