I love un-recipes for a quick and tasty lunch. Un-recipe’s also fall into the comfort food category for me, which is a double bonus. The last short while, whilst sorting out our home and garden, un-recipe’s of sorts has been on the cards for lunch – either that or leftovers from the previous evenings dinns. I love eggs and tomatoes together in a sarmie or on a slice of hot buttered toast, especially when the egg yolk is still lovely and runny – there is something magical that happens with an egg and tomato – not sure what but it’s yummy. Please let me know how you enjoy this moreish sarmie if you give it a try.
Un-Recipe Egg and Tomato Sandwich
Ingredients
2 slices fresh white bread – brown just isn’t the same for this
Butter
Sliced tomato
Salt and pepper to taste
Fried egg
Method
- Butter the bread and top the one slice with the sliced tomatoes and salt and pepper to taste.
- Add your fried egg and top with the second slice of bread.
- Cut and enjoy.
I’ve never been able to eat egg on bread, since I was a child. Strange hey?

I usually do the same thing the only difference is that after frying the egg, I mash them with fork and spread it to my bread.
I have never thought about mashing the egg before – I have however scrambled eggs to have on a sandwich. Have a happy day. 🙂

I love this idea of the un-recipe comfort meal. I like working tomatoes into almost everything too – when I was little, my mom and I used to eat rice and tomato as a snack – that is a very cherished un-recipe memory of mine 🙂

I never used to enjoy eating cooked eggs, but I’m finding that I seem to enjoy them more now. I just may have to give this one a try. My grandpa was always a big fan of this sandwich. 🙂 I remember him eating them when I was a kid.

A fried egg and tomato sammich was my go-to snack after working the late shift at the bar. You’re right, there is something about the play of the runny yolk, the tomato, and the bread that i find so yummy and satisfying.

Now this is a sandwich I’ve never tried. I’ve topped a fried egg over a hamburger so I’m sensing how good this combo could be! I’m all about easy, simple dishes during these summer months…or anytime actually!

I am feeling you on the un-recipe thing. Sometimes the best things are simple, but just good flavour combos (like for me its greek yogurt and honey).

my gran used to fry bacon bits and then crack an egg over them, flip it and then put it between slices of white bread – heaven we always had them when traveling.

I adore runny eggs on toast, can only have tomato with fried eggs, and can’t eat eggs on fresh bread, it’s always got to be toasted. Love the simple recipe, these are the tasty treats we all adore. 🙂
