Un-Recipe – Egg and Tomato Sandwich

I love un-recipes for a quick and tasty lunch.  Un-recipe’s also fall into the comfort food category for me, which is a double bonus.  The last short while, whilst sorting out our home and garden, un-recipe’s of sorts has been on the cards for lunch – either that or leftovers from the previous evenings dinns.  I love eggs and tomatoes together in a sarmie or on a slice of hot buttered toast, especially when the egg yolk is still lovely and runny – there is something magical that happens with an egg and tomato – not sure what but it’s yummy.  Please let me know how you enjoy this moreish sarmie if you give it a try.

  1. I love this idea of the un-recipe comfort meal. I like working tomatoes into almost everything too – when I was little, my mom and I used to eat rice and tomato as a snack – that is a very cherished un-recipe memory of mine 🙂

    • Hi Kelly. The un-recipe is a fun way of keeping childhood memories alive. Seems all of our happy food memories were more often than not an un-recipe. Rice and tomatoes sound like a lovely as a un-recipe snack. 🙂 Have a happy day. 🙂

  2. I never used to enjoy eating cooked eggs, but I’m finding that I seem to enjoy them more now. I just may have to give this one a try. My grandpa was always a big fan of this sandwich. 🙂 I remember him eating them when I was a kid.

  3. A fried egg and tomato sammich was my go-to snack after working the late shift at the bar. You’re right, there is something about the play of the runny yolk, the tomato, and the bread that i find so yummy and satisfying.

  4. Now this is a sandwich I’ve never tried. I’ve topped a fried egg over a hamburger so I’m sensing how good this combo could be! I’m all about easy, simple dishes during these summer months…or anytime actually!

  5. I adore runny eggs on toast, can only have tomato with fried eggs, and can’t eat eggs on fresh bread, it’s always got to be toasted. Love the simple recipe, these are the tasty treats we all adore. 🙂

    • I am thrilled that there are so many of us that enjoy the same simple treats – makes us feel closer across the vast ocean! Thanks again for honouring me with the 7 links challenge – I am looking forward to rummaging through all my old posts. Have a happy day. 🙂 xo

  6. Hello! I’ve been missing your posts, but I’m ctaching up now 🙂

You’ve got me craving my 2 favourite sandwiches – either tomato slices with salt & pepper, or soft fried egg with cheese, both on fresh white bread! Never tried them together though…I’ll have to do so 🙂

    • Hi Linda, it is lovely to see you back. 😀
Hmm, I have scrambled eggs with cheese before but must try a fried egg – or even a soft boiled egg maybe and let’s face it, it’s hard to beat a tomato, salt and pepper sarmie.
      Have a happy day. 🙂
