Strawberry Scones

I have been on a bit of a scone binge the last few days and just for research purposes made a batch with fresh strawberries – what resulted was a lovely light strawberry flavoured scone – perfect and just for good measure, I served them with strawberry jam and a healthy helping of whipped cream oh and not to forget the ever important cup of tea.  It was a very happy afternoon.

Strawberry Scones

3 cups self raising flour
½ cup slithered fresh strawberries
1 cup cream
1 cup lemondade (sprite)

  1. Preheat the oven to 190°C.
  2. Combine all the ingredients in a bowl until just combined.  The mixture will be quite sticky.
  3. Place the dough onto a floured surface.
  4. Dust your hands and the top of the dough with flour and gently shape the dough into a disk and with a floured cutter, cut out the scones, and place them on a lined baking sheet.
  5. Gently reshape the remaining dough and cut out more scones. I made a total of 12 scones.
  6. Alternatively shape the dough into a square and divide into 12 using a floured knife, separate gently and place onto a lined baking sheet.
  7. Bake for 15-20 minutes until a skewer inserted comes out clean.

  1. Wow – with sprite?! Makes sense, would make them extra light. They look so gorgeous. Am going back to London for a week in October, and already have “scones and cream for tea” on my wish list!!

    • You must be thrilled to be going home for a visit – bet you are going to pack your suitcase full of yummy goodies to take bring back with you. We enjoyed scones and tea in the country somewhere a few years back when we were over in the UK for a family wedding and I still think of how lovely they were! Have a happy day. 🙂

  2. just what I need, I’ve been working in front of this computer and could do with a break..scones with strawberries and cream sound fantastic! x

  3. These look amazing. I’m going to make some scones in the next couple of days for my freshly made damson jam! I can’t wait. Get yourself some clotted cream – there is nothing better than clotted cream on scones.

  4. I’ve never made scones before and I’m thinking that I need to – first the peppadew and chives, now strawberries! You’re making me so hungry! I could make a whole meal out of these. Have a wonderful day Mandy!

  5. Mmmmm…these scones look fabulous! I love how you used Sprite for the liquid – that’s my favorite soda!

  6. These look fantastic, strawberries in the scone itself is a great idea, I would serve with fresh sliced strawberries too, cos frankly there’s no such thing as to many strawberries is there! I’ve never heardof Sprite in scones before, love this recipe, thanks. Will be making these very soon! Jenny.
