Food, as it always is in our family, was the main topic of conversation. Years ago, my mom came across the easiest recipe for a potato salad – potatoes and a bottle of what I have always remembered being French salad dressing and which mom has tried to reassure me is Italian salad dressing. Be that as it may and our ever changing palette away from most things preserved and processed (except for Aromat of course) we thought it a much nicer idea to make the dressing ourselves. What a hit! We enjoyed it so much, mom made if for us three times in one week! A must make this absolutely is, especially with the holidays coming up and lots braai’s (barbecues) and alfresco dining with family and friends.
Garlic Vinaigrette Potato Salad

40ml white vinegar
1 large clove garlic crushed
15ml sugar
80ml olive oil
Salt and black pepper to taste
20ml moss curled or flat leaf parsley chopped
Method
- Place the potatoes in a dish.
- Combine all the remaining ingredients and pour over the potatoes and stir through to coat the potatoes.
I love potatoes and of course potato salad, but never had this kind of vinaigrette potato salad. How interesting! And amazingly so easy to make… I guess I’ll be trying this pretty soon. 😉
Nami, this is my new favourite potato dish – I enjoy it hot and cold. 🙂
*faints at the mention of Aromat …* 😀
*Hides face in embarrassment*. Have a super day Cindy. 🙂
This has been a family favorite for ages, although we don’t include any sugar. In fact, my Aunt served it during my last visit and your picture could just as easily been taken at our dinner table that evening. It’s a delicious alternative to the “standard” potato salad and one that I’ll be making soon, thanks to your post. Have a great day, Mandy!
Excellent, I love it when we have something similar to people across the oceans – makes me feel like we are all closer! Have a fantastic day too ChgoJohn. 🙂

Lovely way of eating potato salad without loading it with mayo….might make this tonight if it stops raining and I can wade across the patio to my parsely 🙂
Hmm, I am sue it will still be nice without the parsley so if all else fails and the rain doesn’t let up, you can make a modified version. Have a super day. 🙂
This sounds really delicious 😀
A meal on it’s own for me. Have a super day. 🙂
I too switch out any “bottled” ingredients for fresh and you’ve done a fabulous combination of flavors in this dish!
I do try and keep it all fresh – every now and again I slip but everything in moderation I guess. This really is a fantastic combination of flavours. Have a great day. 🙂
Fantastic! I know my wife would love this too.
I thought of Katherine with the no mayo! Hope she enjoys it as much as we do. Have a great weekend. 🙂
I’ve never put vinegar and garlic together with potatoes – but I’m thinking to myself … why not? This sounds wonderful. Hope you have a great weekend !

Then this will definitely be your kind of salad Angie. Have a super weekend. 🙂
What I love the most about your recipes Mandy is that i can make them. You use ingredients that most of us have in our pantries and fridges, so your food is very accessible and thank you for that! love this potato salad.. c
Thanks for the lovely words C. The principle of all of my recipes is quick and easy – kind of just my way of cooking I guess. Have a great weekend. 🙂
I love to make my own dressings – at least you know what goes into them! Lovely looking potato salad.
I am leaning more and more to making all of my own dressings and marinades as there are so many bad things in the store bought ones now days! Have a great weekend. 🙂
This sounds like a potato salad that I would LOVE! I’m so glad you posted this one as I still haven’t found my favorite potato salad recipe yet. 🙂

I love to make potato salads with vinaigrettes. I often add chives and capers to it. Garlic sounds like a great thing to try next.
Thanks for stopping by Joannie, I love the idea of capers, will definitely be adding a few of those next time around. Have a happy day. 🙂
One of the first dinner parties I ever cooked, at 18, was Japanese. I made a potato salad that was very similar to this.
Very brave hosting a dinner party at 18 and no less Japanese – kudos for that! This is a winner salad. Have a super weekend. 🙂
