Mini Chicken Meatballs over Butter Fried Baby Cabbage and Roma Tomatoes

I really should think about a shorter title but Chicken Meatballs and Cabbage doesn’t quite have the same ring to it.Β  This makes for a scrumptious lunch or light dinner and comes together in no time at all.

The picture leaves much to be desired but the flavour was delicious, promise.

Mini Chicken Meatballs over Butter Fried Baby Cabbage and Roma Tomatoes

Ingredients

500g ground chicken
1 egg
45ml finely diced onion
15ml sweet chilli sauce
10ml chicken stock powder
5ml dried thyme
Salt and black pepper to taste
1 baby cabbage shredded
8 Roma tomatoes halved

Method

  1. Combine all of the ingredients except for the cabbage and tomatoes in a bowl and form small meatballs.
  2. Pan fry the meatballs in a little drizzle of olive oil and set aside.
  3. Melt a good sized knob of butter in a pan and fry the cabbage and tomatoes for 2 minutes.

  1. You made me laugh, Mandy, for I also consider title length when posting a recipe. I laugh because I would never skip a recipe of yours, for example, if I thought the title too long. For me, it’s always about the content. So, why do I worry so much about things like title length. πŸ™‚

  2. I never think to make chicken meatballs which is silly as I have so much usually in my freezer! Love the flavours int he meatballs and the simplicity of pullitng this dish together. Fantastic!

  3. Hi Mandy – i do fish balls by first cooking the fish and then fry. should i do the same with the chicken? ie cook first and then mince?

    • I wasn’t sure if people would like the idea of the cabbage. Not your usual combination of flavours but it certainly worked very well. I don’t think your titles are too long at all. Have a super day. πŸ™‚

  4. Sometimes nothing will do but having a long title! πŸ™‚ I love how this dish looks with the strands of baby cabbage. They look almost like buttery pasta strands, and the dish is so pretty and colorful.

  5. I’m totally making this.. I’ve tried to cut out carbs and have managed to lose a few pounds. This looks like pasta but healthier:) I’ll let you know how it goes!!

  7. Looks so scrumptious! My kids love cabbage and I cook it with butter and S+P too. The sweetness come from cabbage and such a delicious veggie dish! I love to make meatballs and eat it together just like you did. Wonderful inspirational post, Mandy!
