Charlie’s Mom’s Christmas Whiskey Logs

I love my daily read about Charlie’s life over at Hotly Spiced.  I commend Charlie for being such an incredible mom to her 3 children who keep her on her toes 24 x 7.  Do pop over for a read, Charlie always has the most wonderful stories and recipes to share.

The recipe calls for making 6 logs but I made 8.  Good thing too as I can make the deliciousness stretch a wee bit further.  I didn’t have any green glacé cherries on hand so sadly my logs aren’t decorated with holly and are not as elegantly covered with the chocolate as Charlie’s.  No matter as they still taste fabulous.

These make for perfect Christmas gifts wrapped in clear cellophane tied with festive ribbon.

Whiskey logs 2

Charlie’s Mom’s Christmas Whiskey Logs

Ingredients

400g plain biscuits – I used Marie Biscuits
125g butter chopped
1 cup icing sugar
1 egg
½ cup whiskey
100g chocolate chips
100g glacé cherries halved plus a few extra to make holly
200g dried fruit – I used bakers mix
200g dark chocolate

Method

  1. Crush the biscuits and set aside.
  2. Beat the butter and sugar until pale and creamy and mix in the egg, whiskey, biscuits, chocolate, cherries and dried fruit.
  3. Roll into 6 evenly sized logs, wrap in cling film and refrigerate for a few hours.
  4. Melt the chocolate using a double boiler and cover each log in chocolate.  Allow to cool and set in the fridge.
Note:  It is easier to coat the top, sides and ends of the logs first, then place on baking paper, put in the fridge until the chocolate has set, then remove from the fridge and turn upside down to coat the under-side of the logs.
  5. To serve, cut into slices with a hot knife.

  1. Hi Mandy,

Wouldn’t you know it I’m on a diet at the worst time of the year but I have resolved that Christmas Day will be the exception. I have been collecting and baking for the last two weeks in anticipation of Christmas Day and this treat is definitely on the baking list this weekend! YUM!

  2. This recipe caught my eye over at Charlie’s place and you’ve done it again here. I don’t know, though, whether to make more, like you did, or even less than Charlie did. I fear that the smaller the loaf, the more likely one – or heaven forbid three — will end up missing by the next morning. Delicious sweet things have a way of disappearing overnight. Between you and me, I think this place is haunted by spirits with a sweet tooth. Shhh!

  3. Wow that sounds incredibly easy and super delicious. I want to try that if I can find the cherries here. I agree with John, I think these little logs would play disappearing tricks and no evidence would be left except for a chocolate rim around my teenagers lips. Have a super weekend. BAM

  4. Oh yum Mandy! I’m so glad you’re reading my mind right now 🙂 I’m ready, able and willing to give these a shot. They’re perfect for my craving I’ve been having this week. 🙂

Your pictures are sooooooo good, i feel like I can reach into the monitor and just pick one up. And eat!

    xoxo

  5. Thanks so much Mandy for your kind words about my blog! I’m glad you enjoy the horror stories! I’m so pleased you tried this recipe and you have had a great looking result. I’ll have to tell my mother – she’ll be very proud! It’s been so difficult to source green cherries this year. I don’t know what the problem is. I’ve been able to buy just a few for my Christmas cakes. Spying them in the cake will be like trying to find pennies in a Christmas pudding! Thanks again for your lovely post xx

    • Thanks Charlie, I was a wee bit worried you were going to be insulted with my finished result! Good to know they are up to standard. How odd about the green cherries. They are readily available here – wonder what it would cost to send some over to you? Although I do like the challenge of finding green cherries like pennies. 😉 Thank you for this fabulous recipe! Have a beautiful weekend. 🙂 xo

  6. I remember seeing these at Charlie’s blog and thinking I’d like to make them…then I forgot. Thank you for reminding me, and yours look as delicious as hers did, even minus the decoration. My only worry is that they’d never make it out of the house as gifts! 😉

  7. I so enjoy Charlie’s stories too! She’d be a great neighbor and friend to have close by!! And I do remember seeing these! I’m so glad you tried the recipe as I remember making a mental note to make them also! I agree they would make a great foodie gift!

  8. I love your idea of making these as gifts & usually do cinnamon rolls for the neighbors. They’re very time consuming though & since I like giving them still warm from the oven, it’s always a last minute & late night. Might just be doing a change-up this year.
Thank you for the tip about checking out Charlie’s blog. Always appreciate good referrals & will need to check her other posts too.
