Warm winters day clean out the fridge salad

Now how’s that for a title!  Quite apt if you were in our kitchen yesterday just before lunch time.   As we do, I have been storing a few bits and bobs in the line of leftovers the last couple of days and thought it time to use them up plus there were little dregs of sauces which I just don’t have the heart to throw away – I always think I can add them to something else but in reality never do, so, it was time to clean out the fridge.  What resulted was a taste bud tantalising and very satisfying lunch.

Winters day salad

My salad consisted of crispy baby gem lettuce, onion, cucumber, tomato, coriander, roast chicken and gammon with a drizzling of mayo, sweet chilli sauce and black pepper which I enjoyed in a nice cosy sunny spot in the lounge.

There was a little more motivation to emptying the fridge but you will have to wait to see why.  Sadly no, we are not getting a new fridge, well not yet anyway.

  1. Gorgeous – I think we’re forced to be extra inspired when faced with a limited number of lovely ingredients which need to be used. I’m just at the “filling up the fridge” stage here right now though!

  2. Ugh! Warm winters day (Yes) clean out the fridge salad (No!) Mands the title conjures up all kinds of ickiness for me but your salad looks divine in spite of the title, hope you had a little glass of wine to go with that salad in the sun 🙂

  3. Leftover creations are some of the finest. You must have been watching the Asian food channel yesterday as they had a whole session on leftover and boxed lunches. Your post would have fit right in. I love the sweet chili sauce idea.

  4. I love a good fridge clean-out day. It’s fun to see what you can come up with – and you come up with a winner! Can’t wait to see why the motivation to clean-out the fridge sprang up. 🙂 Have a good weekend Mandy!

    • Thanks Kristy. It helps having a salad with some some protein to help with keeping my tummy full until supper. Have an awesome day. I am sure you will like my reasoning for cleaning out the fridge. 🙂 xo

  5. From such humble beginnings, a truly spectacular salad was born! Way to go Mandy! Like everyone else, that sweet chili sauce had me by the taste buds. So, I searched your site and found it. Thanks, Mandy!

    • You always know how to make me feel good John, thank you. Oh crumbs with mybeing distracted lately I forgot to put links in this post. I am sure you will understand when you see why….
So pleased you found the recipe for the chilli sauce. Have an awesome day. 🙂 xo

  6. Oftentimes we have wonderful little bits of food left over that never are enough for a meal but make a terrific salad. I made a similar salad the other day as we were preparing to move to our cottage in Maine for the summer.

    • How lovely that you are getting ready for your beautiful Maine summer home Karen. Pete and I are away ourselves at the moment. He whisked me off to Mauritius for a little holiday. It’s wonderful being back here. Have a beautiful day. 🙂 xo

  7. I was curious what’s your dressing, and you said mayo and sweet chilli sauce? Really? WOW I’m going to try that for today’s lunch! I LOVE sweet chilli sauce and always overdip everything… I think you already got me hooked with this dressing even before tasting it!

Don't be shy, leave a reply. :-)
