Stuffed Brown Mushrooms

I couldn’t resist a pack of 4 giant brown mushrooms the other day, I had no idea what I was going to do with them – they usually get put on the braai but sadly Pete was away so it was me, the mushrooms and the oven.

The first couple of mushrooms I stuffed with a mixture of crumbled feta cheese, chopped chives, fresh sliced peppadews and crushed garlic with the chopped stems from the mushrooms, which I then drizzled with olive oil and bakedΒ at 200Β°C for approximately 18 minutes.

I also did a few with sliced garlic, sea salt, black pepper and a good drizzling of olive oil.

Both variations were fabulous, couldn’t be easier to prep and cook and would be perfect as a starter for a dinner party.

  1. I love mushrooms done simply like this. There used to be a great restaurant near us (Italian) that did the best grilled mushrooms and it was my favourite entree to order. They were cooked a lot like your second one. What a great dinner xx

  2. I love stuffed mushrooms & I had to look up peppadews…that’s a new one for me. You’ve reminded me that I haven’t made them in a while so I thank you for the reminder. One thing I do with mine for a few hours before cooking is to marinate them in a plastic bag w/balsamic vinegar & olive oil. Gives a nice little flavor to them.

  3. These do look good, Mandy. I love the fixins you used in the first’s stuffing and the one with the garlic is calling my name. No matter when you serve them, both kinds would be welcome at my table. πŸ™‚

  4. Both of these do look yummy and entirely different from each other. I love stuffed mushrooms, trying unsuccessfully once last summer when mine flattened like pancakes, lol! You’ve got some lovely looking dinners for one here, not just for dinner parties! xx

  5. when we were in Santorini many years ago on holiday, we ordered the ‘mussels’ and out came the ‘mushrooms’. You just took me back to those glorious days. We didn’t get what we wanted but boy were those mushrooms good! They were like your second option, lots of sliced garlic and olive oil. Yum Yum

  6. I am drooling as I can just imagine how wonderful it is going to taste. I usually cook my stuffed mushrooms out on the grill but in the winter time it would be nice to try it in the oven. Have a super week. Take Care, BAM
