Sun Dried Tomato & Ginger Dressing

This is such a flavour packed colourful dressing which keeps well for up to a week in the fridge. Β Just a splash is needed per serving so goes a long way and makes for a lovely hostess gift.

Sun Dried Tomato & Ginger Dressing

Ingredients

80ml rice wine vinegar
5 marinated sundried tomato quarters
15ml tomato paste
5ml salt
2.5ml black pepper
45ml honey
Zest & juice of 1 orange
10ml fresh ginger grated
125ml parsley
60ml mint
180ml olive oil

Method

  1. Blend all the ingredients except the oil.
  2. Slowly add the oil until creamy and combined.
  3. Serve over roasted vegetable salad

  1. Easy, flavorful and colorful, my kind of dressing and even better that it will keep for up to a week in the refrigerator. Was wondering if it will freeze well, if yes, could freeze in ice cube trays and thaw as needed.
