This is such a flavour packed colourful dressing which keeps well for up to a week in the fridge. Just a splash is needed per serving so goes a long way and makes for a lovely hostess gift.
Sun Dried Tomato & Ginger Dressing
80ml rice wine vinegar
5 marinated sundried tomato quarters
15ml tomato paste
2.5ml black pepper
Zest & juice of 1 orange
10ml fresh ginger grated
180ml olive oil
- Blend all the ingredients except the oil.
- Slowly add the oil until creamy and combined.
- Serve over roasted vegetable salad
