This is such a flavour packed colourful dressing which keeps well for up to a week in the fridge. Β Just a splash is needed per serving so goes a long way and makes for a lovely hostess gift.
Sun Dried Tomato & Ginger Dressing
Ingredients
80ml rice wine vinegar
5 marinated sundried tomato quarters
15ml tomato paste
5ml salt
2.5ml black pepper
45ml honey
Zest & juice of 1 orange
10ml fresh ginger grated
125ml parsley
60ml mint
180ml olive oil
Method
- Blend all the ingredients except the oil.
- Slowly add the oil until creamy and combined.
- Serve over roasted vegetable salad

Easy, flavorful and colorful, my kind of dressing and even better that it will keep for up to a week in the refrigerator. Was wondering if it will freeze well, if yes, could freeze in ice cube trays and thaw as needed.
