I go this super easy recipe from my aunt and is perfect for your next braai (barbeque) and is wonderful with lashing of cold butter.
Corn Bread
Ingredients
415g tin creamed sweetcorn
1 cup mielie meal
2 eggs
¼ cup oil
2 tsp baking powder
½ tsp salt
Method
- Preheat the oven to 180°C.
- Combine all of the ingredients and place in a prepared loaf tin.
- Bake for 50 minutes or until golden brown.
I’ve never really been a fan of cornbread as all the recipes I’ve tried have been sweet. But this one…..now you’re talking! Looking forward to giving it a go.

“with lashing of cold butter” has just got to be one of the most welcome phrases in the English language 🙂 love cornbread and my eldest is constantly reminding me that I haven’t made it in ages! Coming from the deep South I do say this recipe looks so good. We cannot have a meal without cornbread! I make a basic recipe and turn the finished loaf into bread crumbs and croutons for other recipes. Thanks for sharing.
