Potato Bake

A potato bake is always a yummy side dish for a braai (barbecue) and there are no limits to ingredients you can add to personalise it.  I often use this recipe for winter braais when a salad just won’t do in the cold weather.

Potato Bake


4 large potatoes
1 packet cream of mushroom soup powder
2 garlic cloves crushed
1ml salt
Pinch cayenne pepper
1ml mustard powder
250ml cream
125ml milk
2 onions sliced and fried
1 packet bacon chopped and fried
250ml grated cheddar cheese


  1. Boil the potatoes in their jackets until just done.  Peel and slice.
  2. Preheat the oven to 180°C.
  3. Mix together the soup, garlic, salt, pepper, mustard powder, cream and milk.
  4. Layer the potatoes in a casserole dish alternatively with the onions, bacon and the cream mixture.
  5. Top with the grated cheese and bake in the oven for 30 to 40 minutes.

Rustic Potato Cakes

These potato cakes are yummy enough to be a meal on their own and are a great accompaniment to any meal.

Rustic Potato Cakes



6 medium potatoes
2 extra large eggs
6 spring onions
1 garlic clove
Salt and pepper to taste
20ml fresh parsley
Oil for frying


  1. Peel, chop and cook the potatoes.
  2. Mash the potatoes roughly.
  3. Whisk the eggs and add to the potatoes.
  4. Finely chop the spring onions, garlic and parsley and add to the mixture.
  5. Season with salt and pepper to taste.
  6. Place large spoonfuls of the mixture into an oiled frying pan and fry until golden brown on both sides.
