Was some scrumptious macaroni and cheese, unbaked, my lazy way of making it.

Is a bottle of Amarula, a gift from my brother Greg and his wife Karin. ¬†I can see getting rid of my winter weight will have to wait a while longer. ūüôā

In My Kitchen – December 2014

Well, the end of the year jumps on you before you know where you are.  Just a few more sleeps and we will be at the beginning of another new year.

In my kitchen…

A full month ago (I really do need to keep up to speed) were cupcakes for our neighbours.  Their beautiful little daughter Jasmine was born after mommy went through 2 days of labour so I thought celebratory cupcakes were in order.

Is a red quinoa salad.  Not sure the red is any different to the white and would probably mix the two just for colour effect.  I keep saying quinoa on its own is very bland but in this salad is an absolute winner!

Well, actually in my bathroom but I wanted to share with you the beautiful hand crafted ebony candle stick Pete brought back from Malawi for me.

Is a new kettle.  Our old one suddenly gave up the ghost and was I in for a surprise to see how expensive kettles have become.

Is a new shelf in the spice cupboard.  What a difference a little extra space makes.

Things are still skew from the water damage we had. Oh what a memory, something I hope never to endure again.

Is some raw honey Pete and I bought on a trip away and on reading the label comes from just down the road from where we live.

Karin’s Quinoa Salad

My lovely sister-in-law Karin introduced me to the super grain quinoa.  I know, I am far behind in trying new things.  I was also put off by how expensive it is.

Quinoa in a nutshell Рit is high in protein, is a good source of dietary fibre and phosphorus and is high in magnesium, iron and calcium, so is good for vegans and those who are lactose intolerant and is also gluten-free and is easy to digest.

On it’s own quinoa tastes pretty much like nothing but has a wonderful texture and put with other lovely ingredients makes a fabulous salad. ¬†Karin adapted a couscous recipe from her favourite recipe book, The Cake the Buddha Ate. I highly recommend you make this for a lovely hot summer’s day salad.

Karin’s Quinoa Salad

Ingredients

3 cups cooked quinoa
1 cup flaked almonds toasted
1 cup fresh coriander chopped chopped
1 cup tinned chickpeas – oops I forgot to put these in
1 cup red and yellow capsicum peppers chopped РI only had yellow
¬ľ cup dates chopped
¬ľ cup figs chopped
¬Ĺ red onion chopped

Dressing

100ml olive oil
50ml apple cider vinegar
¬ľ tsp cinnamon powder
1 small garlic clover crushed
Salt and pepper to taste

Method

  1. Combine all the salad ingredients in a bowl.
  2. Mix the dressing ingredients together and pour over the salad and mix through.
