Noodle Salad

The great thing about noodle salads is you can substitute the noodles for your favourite; I often use mini shells as they hold the sauce really well.  

Noodle Salad

 

Ingredients

½ packet “elbow” noodles
1 small onion
½ green pepper
60ml sugar
15ml curry powder
125ml tomato sauce
60ml vinegar
60ml sunflower oil
Salt & freshly ground pepper to taste

Method

  1. Cook the noodles according to the instructions on the packet.
  2. Finely chop the onion and green pepper and place in a bowl.
  3. Add the balance of the ingredients to the bowl and mix well.
  4. Add the noodles and stir through.
