This is great dish to enjoy over rice and comes together in a short time, perfect for a week night meal. Thanks to Karin for this great recipe.
Mushroom & Butter Bean Goulash
Ingredients
1 tablespoon coconut oil
1 onion chopped
2 garlic cloves crushed
1 inch piece ginger grated
500g brown mushrooms chopped
2 X 410g tin chopped tomatoes
2 Tbsp vegetable stock powder
1 Tbsp honey
410g tin butter beans rinsed
Coriander to serve
Method
- Heat the oil and fry the onion, garlic and ginger.
- Add the mushrooms and fry until tender.
- Add the tomatoes and stock and simmer for 10 minutes.
- Add the butter beans and honey and serve with chopped coriander.
It looks very satisfying and packed full of flavours…my kind of vegetarian meal!

You’ve posted some really super looking yet simple, hearty meals for us Mandy. This one is absolutely perfect for fall in Massachusetts! Our leaves are turning all sorts of beautiful orange & reds, acorns are plopping down off the oak trees like rain, and there’s a crisp bite to the air every morning.
I always like the easy recipes that produce a great result. I bet it must look beautiful this time of year with the change of season. Seems our summer is going to be hot and cold with lots of rain and wind. I can’t stop thinking about Niki’s wedding video – too beautiful for words. 🙂 xo
When the morning sun hits the maple in the back of our house it looks like the tree is on fire. I think that’s the beauty of fall in New England-all the trees just a riot of colors. Oh go ahead, get a handkerchief & watch the video again – I keep watching & cry every single time.
