Fruity Biscuits

Christmas is just around the corner and if you are still trying to find recipes for your hampers and gift baskets, these are just for you.  If you are wanting to tuck into these flavourful treats yourself, they are best after being allowed to rest for a day first.

Fruity Biscuits

 

Ingredients

2 cups sugar
2 cups coconut
2 cups fruit cake mix
2 cups self raising flour
250g butter melted
2 eggs beaten well
Pinch of salt

Method

  1. Preheat the oven to 180˚C.
  2. Combine all the dry ingredients.
  3. Fold in the melted butter.
  4. Add the beaten eggs.
  5. Place in a greased pan.
  6. Bake for 30 to 40 minutes until golden brown.
  7. Cut into squares when cool.
